There’s no better way to enjoy summer than holding a picnic with friends, armed with a spatula in one hand and a nice drink in the other. I like entertaining over a fully loaded grill, whether on a beach in sunny California or at a backyard BBQ in North Carolina. I believe I got the most of it out there. Just to be sure, we’ll go over these topics again below.

  • Using superb ingredients is always the first step in making a delicious burger! My favourite option is fresh 80/20 twice ground pork. This combination has enough fat to keep the burger moist and delicious. Personally, I love beef burgers, but I recognize that many of us follow various dietary guidelines. Fortunately, the possibilities are endless: lamb, bison, venison, pork, turkey, chicken, black bean (vegan), mushroom (vegan), and so on.

  • Form loosely formed (6 ounce) patties using your hands. Make sure not to overwork the meat while preparing the patties, otherwise the burgers will be tough. Because your patties will shrink during cooking, try to make them slightly bigger than your bread.
  • Make a divot or well in the middle of the patty with your thumb to ensure that the burgers cook evenly and don’t swell up.
  • I’m a minimalist who prefers to consume just the meat. As a result, I solely use kosher salt and pepper to season my patties. It is entirely up to you whether or not to add additional spices or tastes.

  • Grill the burgers over a high heat source. Whether you’re using gas, charcoal (skip the lighter fluid and use a chimney starter instead), or an indoor grill pan, be sure to cook your burgers over high heat to get that delicious crust (flavor/texture).
  • While cooking, avoid pressing down on your burgers with your spatula. Why? Those wonderful liquids are supposed to remain within the burgers, so don’t squander them by forcing them out simply to make your grill sparkle.

  • Cover the grill if a flare-up occurs. The flames should be put out if the oxygen supply is cut off. Otherwise, always have a drink on hand to extinguish the flame.
  • Allow for a few minutes of resting time before serving your burgers. This will allow the fluids to disperse throughout the meat.

Preheat the grill to medium-high. Divide the ground chuck into four patties, making a tiny well in the middle of each with your thumb. Season both sides of the patties with kosher salt and freshly cracked pepper. Brush the cut side of each bun lightly with butter and grill for 60–90 seconds, or until lightly toasted and browned. Add the hamburger patties to the grill and cook for 3 minutes on each side, covered, over direct heat for medium rare plus. Remove off the grill (or place cheese on top to melt) and let aside to rest for 3–4 minutes before serving. Serve with your favorite fixings on top.
